Domaine Pattes Loup - Chablis 1er Cru Butteaux 2016
Domaine Pattes Loup is located at Courgis, in the Chablis region of Burgundy. Thomas Pico discovered a passion for viticulture very early on, growing up surrounded by a winegrower's father and grandfather. He studied viticulture and oenology in Beaune and then returned to the family estate of Bois d'Yver in 2004. A year later, in 2005, Thomas took over 8 hectares of vines from the family estate and also began to plant his own vines on the place called “Pattes Loup”, hence the name of the estate.
The first vintage under the Domaine Pattes Loup was bottled in 2006. Today, Thomas manages 25 hectares of vines organically farmed in the village of Courgis. The estate was certified in organic farming in 2009. Thomas works a meticulous approach, focused on respect for nature in the vineyard, with a thoughtful style of winemaking, unique to Chablis.
Butteaux is the Chablis 1er Cru from Thomas Pico. The wine is fermented and aged in a mixture of second-use oak barrels for 12 months, and also in concrete tank for 12 months. Les Butteaux is aged for a long time on the lees, then undergoes a long and slow aging for 12 months in the bottle.
