Domaine des Rosier - Cuvée Paul 2017
The Domaine des Rosier is located in the appellation of Grignan-lès-Adhémar in Drôme Provencale. In 1950, Paul Rosier joined the estate as an agricultural employee for the owners of the time. His son, Jean-Claude Rosier, bought the property and the 10 hectares of vines he cultivated, and whose grapes were sold to a cooperative winery. Since 1990, Bruno Rosier, Jean-Claude’s son manages the estate sustainably and with respect for the environment. Nowadays, he cultivates thirty hectares of vines and lavender to maintain the biodiversity of the vineyard.
The Cuvée Paul is a blend of Syrah (80%), Grenache (15%) and Viognier (5%). The old Syrah and Grenache vines were planted by Paul Rosier, hence the name of the cuvée. After the harvest, a semi-carbonic maceration is carried out for three days, without crushing. A daily punching down is carried out between 18 and 20 days to extract the maximum of coloring matter and aromas. The wine is aged in used 225-liter oak barrels, on the lees for 12 months with weekly batônnage (stirring of the lees in the barrel).
