Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Ballykilcavan 1.2 is made from David Walsh-Kemmis's barley, grown in his farm that carry the same name. The barley was harvested on August 17, 2015 and then distilled between February 4 and February 9, 2016. The maturation lasted 3 years, 11 months and 18 days. The whisky barrels are blended on February 05, 2020 before being bottled on July 8, 2020 (55.5 % new American oak barrels, 22% Premium French oak barrels, 22.5% barrels of vin doux naturel). 9,000 bottles were produced.
