Domaine Francois Cotat - Sancerre Blanc - La Grande Cote 2019
François Cotat is a winemaker located in the commune of Chavignol, within the Sancerre appellation in the Loire Valley. The Cotat family has been renowned in the area since the 1940s and its cousin Pascal Cotat also produces wine in Sancerre. François Cotat manages 3 hectares of vines: 1/3 of Pinot Noir, 2/3 of Sauvignon Blanc. The vineyard is cultivated on clay-limestone hillsides, with a unique type of chalky soil called "terres blanches". It is not uncommon to see François Cotat wines under the status of Vin de France, since he tends not to follow the regulations of the Sancerre appellation (higher level of residual sugar or alcohol).
La Grande Côte cuvée comes from the plot carrying the same name of one hectare cultivated by François Cotat. The Sauvignon Blanc is harvested manually and then fermented with its own yeasts before undergoing a light batonnage at the end of fermentation. Aging lasts eight months in 600-litre vats aged 6 to 8 years.
