Domaine GANEVAT - Grusse en Billat 2016
Domaine Jean-François Ganevat is located at La Combe de Rotalier in Jura, France. The estate has been a family property since 1650 and is currently run by Jean-François Ganevat, who trained and worked until 1998 at Domaine Jean-Marc Morey in Chassagne-Montrachet, before returning to his family estate. Ganevat’s production is small, but made up of around 40 different cuvées aimed at highlighting the terroir, the grape variety or the style of winemaking. The 13-hectare estate has been biodynamic certified since 2014. Jean-François Ganevat uses ancient and individualised vinification techniques: destemming is done by hand, no new oak is used, the white wines are aged on lees for a minimum of two years and, since 2006, he has completely eradicated the use of sulfur.
The estate also sources grapes from Alsace, Savoy and Beaujolais for the production of cuvées under the Vin de Franceappellation. These cuvées, blended with the grapes purchased and those from the estate, allow Jean-François Ganevat and his wife Anne to use all the indigenous grape varieties and to develop unique and declassified wines.
Grusse en Billat is made entirely from Chardonnay, cultivated on marl schist and whose average age is 50 years. It is vinified without sulphiting, and topped up regularly. Aging lasts 4 years in demi-muids in a humid cellar.
