Domaine HUET - Cuvée Constance - Moelleux 2016
Domaine Huet is located in Vouvray, in the Loire Valley. Founded in 1928 by Victor Huet and his son Gaston, the estate now has 30 hectares of Chenin Blanc planted on three plots: Le Haut-Lieu, Le Mont and Clos du Bourg. Huet was one of the forerunners of biodynamic cultivation in 1988.
During the harvest, the bunches are picked by successive passages and at optimal maturity according to the desired style of wine, then each plot is vinified separately. The whole bunches are put in the presses, without crushing or treading, where they are pressed gently. After settling for 24 hours, the grape juice is funneled into two parts: one is put in vats, the other in old barrels. The fermentation time varies depending on the richness of the must and the activity of the indigenous yeasts. Each cuvée is kept for 6 months until bottling.
The cuvée Constance pays homage to Gaston's mother. It comes from the most concentrated juices from the three terroirs of Domaine Huet and is produced only in exceptional vintages in small quantities. Le Haut-Lieu plot was acquired by the Huet family in 1928. Today it covers 9 hectares on the Vouvrillon plateau and its very deep soil is made of brown clay. Le Clos du Bourg plot was acquired by the Huet family in 1953. Today it covers 6 hectares and its soil, not very thick, is composed of clay and limestone resting on a tufa subsoil. Le Mont plot was acquired by the Huet family in 1957. This stretch of stony soil and green clay is located directly above the estate's tufa cellars.
