DALRYMPLE - Pinot Noir 2017
Dalrymple Vineyards is located in the region of Pipers River, in Tasmania. It was established by Bertel and Anne Sundstrup in 1987, travelling to France for inspiration and guidance. The winemaking is operated by Peter Caldwell, who graduated from Roseworthy Agricultural College in South Australia, and served his apprenticeship in Burgundy, Bordeaux, California and New-Zealand. The vineyard spreads over 11 hectares where Pinot Noir, Chardonnay and Sauvignon Blanc are grown sustainably.
This Pinot Noir is a blend of parcels from Dalrymple own vineyards at Pipers River, Coal River Valley and growers at Swansea and Ouse. Each of the different parcels from the vineyard sites were picked at optimum maturity. Fermentation started spontaneously after 2 to 3 days. The cap was plunged 2 to 3 times a day to extract colour and tannins from the skins. The wine was pressed after the fermentation and settled before being placed into French oak barriques.
