The grapes of Pinot Grigio are harvested at the maximum stage of ripeness and destemmed when delivered to the cellar. Half of the quantity undergoes cold maceration and ferments at controlled temperature in stainless steel. The rest is macerated like a red wine for 4 days. Once pressed, the fermentation starts in 5-hectolitre oak barrels. During the whole ageing period, the two batches remain separate. The only operation that take place are the control of malolactic fermentation on the wine in wood, and both cuvées are stirred once a week. After 6 months, the batches are blended and the wine is bottled.
Grape variety: 100% Pinot Grigio
