Bonnigal et Bodet Vignerons - Les Beauvoirs 2018
Bonnigal-Bodet Vignerons is a wine estate located in Limeray, in the Loire Valley. The domain exists since 1927 and is still family-owned. Today is the fourth generation, with Jean-Baptiste Bonnigal and his longtime friend Stéphane Bodet, which operates the vineyard. They produce wines under the appellation of Touraine Amboise, Crémant de Loire and Touraine, of 55 hectares. For them, the majority of work is done in the vineyards: tillage, valuing the ecosystem, respecting nature and the environment. They are as little interventionist in the cellar to let the terroir of each wine to express themselves fully. The ageing tends to be long in oak barrels on the lees.
Les Beauvoirs 2018 is made from Chenin Blanc, which average age is around 20 years. The grapes are sorted on a sorting table and then put into direct pressing. Alcoholic fermentation occurs spontaneously with native yeasts and can last up to 6 months. Malolactic fermentation is not sought after for this cuvée. Aging takes place in 225-litres barrels and 620-litres oak barrels for 12 months on the fine lees. The wine is bottled with 4.9 g/L of residual sugars.
