Domaine Jean Macle - Côtes du Jura Blanc - Chardonnay sous voile 2017
The Domaine Jean Macle is located in Château-Chalon, in the Jura. It was created in 1850 by Jean Macle and is now managed by his son, Laurent Macle since 1995. The 12-hectare vineyard is entirely planted with white grape varieties: 8 hectares of Chardonnay and 4 hectares of Savagnin. The vineyard has been certified organic farming since 2015.
The Chardonnay Sous Voile is a Côtes-du-Jura PDO made from Chardonnay, the average age of which is around twenty years. The vines are cultivated on clay soils composed of blue marls and limestone scree. After manual harvesting, the alcoholic and malolactic fermentation are carried out in tanks. Aging lasts 2 to 3 years in 228-litres oak barrels under its veil of yeasts, without topping. The wine is slightly oxidative, delicately spicy but full-bodied and powerful on the palate.
