Bonnet-Cotton - Régnié Les Buillats 2020
Domaine Bonnet-Cotton is located in Odenas, on the south face of the hill of Brouilly in Beaujolais. The estate, created by Joseph Sanvers, has been passed down since 1856 to Pierre Cotton and Marine Bonnet, partners who work the same vines. The estate covers 13 hectares in the Beaujolais, Brouilly, Côte de Brouilly, Régnié and Fleurie appellations. All the vines are worked in organic farming, certified or in the process of certification. Each cuvée comes from plot selections in order to reflect the diversity of Beaujolais terroirs.
The Régnié Les Buillats is made from Gamay Noir with white juice. The grapes, and those produced by their friends, are grown according to the specifications of organic farming. The vinification is carried out by carbonic maceration in whole bunches. The aging lasts 8 months in foudres. The wine is bottled without fining, without filtration and without adding sulphites.
