Mas de Cynanque - Carissimo 2018
Le Mas de Cynanque is located in Cruzy, in the Saint-Chinian appellation in Languedoc . It is managed by Violaine and Xavier de Franssu , both graduates of the Montpellier School of Agronomy. After various professional experiences on wine estates in several regions, they settled in 2004 on the 12 hectare estate. For their first vintage, part of the grapes are vinified in their garage while waiting for the construction of the cellar, the storage cellar and the cellar for tastings. They extended the vineyard to 16 hectares, conducted in certified organic farming , surrounded by scrubland. The vines are planted on two types of soil; the slopes surrounding the Mas are made up of red sandstone (which bring concentration and freshness) and the other part of the vineyard located higher in altitude is on a limestone plateau. They own two plots of Carignan planted in 1911.
Carissimo is made from old Carignan vines , harvested manually and sorted on the plot. The bunches are de-stemmed and then vinified in open-topped barrels to encourage punching down for extraction. The vatting lasts 6 to 8 weeks then the wine is aged 12 months before bottling.
