Domaine Francois Cotat - Sancerre Blanc - Cul de Beaujeu - Magnum 2020
Francois Cotat is a winemaker located in the commune of Chavignol , within the Sancerre appellation in the Loire Valley . The Cotat family has been renowned in the region since the 1940s and their cousin Pascal Cotat also produces wine in Sancerre. François Cotat manages 3 hectares of vines: 1/3 Pinot Noir, 2/3 Sauvignon Blanc. The vineyard is cultivated on clay-limestone hillsides, with a unique type of chalky soil called "white lands". It is not uncommon to see the wines of François Cotat under the status of Vin de France, since he tends not to follow the regulations of the Sancerre appellation (higher level of residual sugar or alcohol).
The Cul de Beaujeu cuvée comes from the plot of the same name and the age of the vines is over 35 years old. The vinification is traditional with direct pressing and a short pellicular maceration before settling. The wine is aged for 8 months in 600-litre casks aged 6 to 8 years.
Grape variety: 100% Sauvignon Blanc
