Don Fulano is a brand of Tequila produced in Atotonilco, in the Highlands of Jalisco in Mexico. It is produced by the Fonseca family , fifth generation of agave growers and distillers. Descendants of Portuguese immigrants, the Fonsecas became well-known farmers owning the main bodega in the heart of the city. In the late 1800s they started planting agave to supply the first tequila distillers who settled in the area and over the years they became major agave producers in the state of Jalisco , supplying agave to some of the best tequila distillers of the time, both in the highlands and in the valleys. In the mid-1980s, they bought La Tequileña Distillery in the heart of Tequila town. Knowing a lot about growing agave but little about making tequila, Enrique Fonseca realized he wasn't quite ready to run a distillery as he had first thought. . So having learned everything he could in Mexico and with great determination, he packed his bags and flew to Europe; in France he learned the importance of wine to make a spirit, in Scotland he learned a lot about distillation and the different types of stills to create different profiles.
Don Fulano uses fermentations with and without bagasse, distillation in copper stills for depth and agave character as well as an experimental copper still for structure and elegance, exclusive maturation in French Limousin oak and in Nevers barrels which previously contained Burgundy, Loire and Bordeaux wines. Tequila is made exclusively from three ingredients: hand-selected Maduro and Pinto agave, specific yeast and natural volcanic water.
Don Fulano Fuerte is made from Maduro and Pinto agaves, cooked for 28 to 32 hours and extracted with a self-designed screw press. Fermentation lasts 72 to 96 hours in open vats then distillation takes place in a copper still. Maturation lasts a minimum of 6 months in stainless steel vats .
