Ilegal Mezcal - Reposado
Ilegal is a brand of Mezcal produced in Oaxaca, Mexico . In 2004, Ilegal founder John Rexer began transporting mezcal from Oaxaca to Antigua to supply his bar. At the time, he brought unbranded mezcal from various villages including Tlacolula, San Lorenzo, Sola De Vega, Santa Catarina Minas, Hierve el Agua or Santiago Matatlan. In 2006, John created the Ilegal brand, originally solely to supply his Café No Sé bar in Guatemala. Its practices reflect a commitment to sustainability and biodiversity in the Oaxaca region. Ilegal does not use any artificial colors, yeasts, flavors or additives. This commitment is found at every stage of the process. The artisanal mezcal is produced in small batches and then each bottle is corked, labeled and numbered by hand. The mezcals use only perfectly ripe, twice distilled Espadín agave .
Ilegal Mezcal Reposado is aged for 6 months, using a combination of new and used American oak barrels, medium toast. The barrels come from Kelvin Cooperage, a family business since 1963.
