Balconies - Baby Blue - 46%
Balcones Distilling is located in Texas, USA . In 2008, Chip Tate moved into an old welding shop located under a bridge in Waco. After a year replacing the roof, tearing down walls, laying bricks, cutting pipes, he installed copper stills from Portugal and created his distillery. The first distillations took place in 2009. The ingredients chosen are qualitative and varied: from blue corn grown in New Mexico to the first malted barley grown in Texas. The effort and passion paid off: Chip Tate's whiskey was a hit almost from the moment it hit shelves in ten states in 2010. In late 2012, he realized he had needs financial assistance to develop, and appeals to an investor: Gregory Allen. After a dispute with the latter, Chip Tate agreed to let the board buy out his shares in the company, he was later fired and, by a non-compete agreement, banned from making whiskey until March 2016 The chief distiller is Jared Himstedt.
The first Texan whiskey on the market since Prohibition, Baby Blue is made from roasted blue corn . This rich, oily corn adds a new sophistication to the tradition of corn whiskey while retaining the freshness and verve of classic American distillation. Intentionally young, Baby Blue captures the essence of this prized corn with toasty notes and refined complexity.
