Chateau Dompierre - Pauillac 2018
Château Dompierre is located in Saint-Laurent-Médoc , near Pauillac in Bordeaux . Michel Aroldi , born in Libourne, is heir to a long peasant tradition. In 1993, he bought Château Plain-Point in Fronsac and established himself as a very talented winemaker. Attracted by an evolution in terms of vintage, Michel Aroldi acquires Château Dompierre on the terroir of Pauillac. He attaches great importance to respect for the ecosystem , the terroir and the vintage. Thus, from the vine to the breeding, he sets up a process of reasoned agriculture , inspired by simple and natural rules.
Château Dompierre is made entirely from Cabernet Sauvignon , meticulously sorted during harvest. After the manual harvest, the grapes are destemmed. Fermentation takes place in wooden vats with indigenous yeasts. The cap of marc is immersed and the vatting lasts 7 weeks. The aging lasts 20 months in wooden vats from Nadalié, made of fine-grained French oak.
