Paulus Wine Co. - Bartas - Chenin Blanc 2021
Paulus Wine Co. is a collaboration between Paul Jordaan , South African, and Pauline Roux , French. Paul Jordaan, after years of travels and wine experiences, had been working alongside Eben Sadie for 10 years. Pauline Roux was supposed to return to Tuscany but decides to do one last harvest in South Africa and decides to stay. She has worked with Adi Badenhorst and Andrea Mullineux. The duo met in 2016 when they were working together for an estate in the Swartland region. Two years later, they created Paulus Wine Co. Paul takes care of viticulture while Pauline is in charge of winemaking. The dates of the harvest and the work in the vines are discussed and chosen together, all the important decisions of the cellar are approved before being executed.
The Bartas cuvée is made from Chenin Blanc , grown on shallow, warm granitic soils in the Helderberg, the southernmost part of the Stellenbosch region. The plot is located on the Rustenhof farm and the vines were planted in 1978. The harvest is manual and pressed in whole bunches. The wine is aged in 500 liter barrels for 12 months .
