Dalrymple - Cave Block Chardonnay 2019
Dalrymple Vineyards is located in the Pipers River region of Tasmania . The estate was created by Bertel and Anne Sundstrup in 1987, traveling to France to find inspiration and advice. Winemaking is led by Peter Caldwell , a graduate of Roseworthy Agricultural College in South Australia, and apprenticed in Burgundy, Bordeaux, California and New Zealand. The vineyard covers 11 hectares where Pinot Noir, Chardonnay and Sauvignon Blanc are grown sustainably .
Cave Block Chardonnay is made from hand-harvested grapes grown on draining soils and steep slopes, producing low yields of intensely concentrated fruit. Whole bunches are pressed and then fermented in a combination of new and old French oak barrels . The vinification also includes a fermentation parcel with wild yeasts, a light contact with lees and a partial malolactic fermentation .
