Domaine Bernard Defaix - Petit Chablis 2022

Domaine Bernard Defaix is located in Chablis , in Burgundy. It was founded in 1959 by Bernard Defaix and is now managed by his sons Sylvain and Didier Defaix . The estate has 27 hectares of vineyards, in the Chablis Premier Cru (Côte de Lechet, Vaillons and Lys), Chablis and Petit Chablis appellations. The vines are cultivated in certified organic agriculture .

Petit Chablis is made from Chardonnay whose vines are around 35 years old, grown on the plateaus overlooking the valleys, and facing west. After a mechanical harvest which allows a greater flexibility of intervention, the harvest is put in direct pressing. The alcoholic fermentation and then the malolactic fermentation take place in stainless steel vats . The wine is aged on fine lees for 8 months .
