Los Javis Mezcal is a family run Mezcal from Oaxaca from Santiago Matatlan, Mexico . Hand-selected agave is roasted in a conical stone oven, ground in tahona and naturally fermented in wooden vats. Los Javis mezcal is distilled in small copper pot stills and is individually bottled, numbered by hand.
This Mezcal is produced with Espadin maguey ( Angustifolia variety of agave). It was distilled in 2022 by the “Maestro Mezcalero” Don Javier Mateo.
