Domaine de Villaine - Bouzeron - Aligoté 2021

The Domaine de Villaine is located in Bouzeron , in the north of the Côte-Chalonnaise in Burgundy . The estate was bought by Aubert and Pamela de Villaine in 1971, and has been managed since 2001 by their nephew, Pierre de Benoist . Since 1986, organic farming methods have been developed within the vineyard. The estate has several climats in the communes of Bouzeron, Rully, Mercurey and Santenay which are planted with Aligoté, Chardonnay and Pinot Noir.

Bouzeron Aligoté is made from Aligoté Doré vines located on the best slopes of the appellation. Picked and sorted by hand, the grapes are put in whole bunches on the press. The pneumatic pressing is slow and gentle in order to obtain clear juices without astringency. The musts ferment in barrels, vats and oak tuns at a controlled temperature to preserve the freshness of the grape variety.
