Maison Ferroni is located in Aubagne in Provence , near Marseille. The headquarters of the distillery was installed at the Château des Creissauds . Guillaume Ferroni , passionate about ancient spirits and aromatic plants, has developed a varied range of spirits, combining history, cultural heritage and natural resources. It markets rums, whiskeys, liqueurs, pastis etc. most of the necessary plants are grown and harvested on the estate in the wild.

Pastis du Château des Creissauds is made from fresh plants from the 7 hectares of the estate. These aromatic plants are complemented by Mediterranean plants grown in the aromatic gardens of the Château. After a manual harvest which lasts from April to October, the plants are macerated in Dame-Jeanne in superfine alcohol. Each plant is macerated separately before being blended together and then placed in oak tuns for a year. The distillate is then drawn off, then the liquorice and the essence of anise are added before the reduction to the final degree.
