Herve Souhaut - Sainte Epine 2022
Domaine Hervé Souhaut/Romaneaux-Destezet is located in Ardèche , on the right bank of the Rhône opposite the Hermitage hill. It was created in 1993 by Hervé Souhaut and has grown over the years through the planting of new vines and the successive purchases of various plots often planted with old vines (50 to 100 years old). Hervé Souhaut, a trained biologist who has become a passionate and respected winemaker, cultivates his vines biodynamically without certification , using cultivation methods that respect the environment. The vineyards are mainly planted with local grape varieties such as Syrah, Gamay or Roussanne. The harvesting of the grapes is done manually, and the vinification process is minimalist , letting the native yeasts play their role and avoiding the addition of chemical additives.
Sainte Epine is made from century-old Syrah vines. The whole harvest undergoes a long maceration at low temperature with mechanical extraction by punching down. The wine is aged on fine lees for 12 months . Bottling is carried out without filtration with less than 25 mg/L of sulphur.
