David & Nadia - Elpidios 2020
David & Nadia Estate is located at Paardebosch Farm in the Swartland region of South Africa . The estate was created by the couple David and Nadia Sadie , both qualified in viticulture and oenology. They produced their first vintage in 2010 while still working for their former employers. In 2013, David resigned and Nadia joined him in 2016 to devote herself entirely to their vineyard. About half of the grapes they work with come from the farm in Paardebosch where the winery is based, and the rest come from other farms, all in Swartland. They are carrying out three projects: the David & Nadia vintages (grapes used throughout the Swartland representing its soils, vineyards and inhabitants), the Topography vintages (only grapes grown in the Siebritskloof of Paardeberg where they are based) and the Skaliekop and Hoë-Steen. They have an approach of minimal intervention and organic farming in the vineyard and in the cellar. They very quickly became one of the leading wine producers in Swartland , and considered among the most exciting in South Africa .
Elpidios 2020 is a blend of Grenache Noir (38%), Syrah (36%), Cinsault (10%), Carignan (9%) and Pinotage (7%). The Grenache and Syrah were fermented and aged in concrete vats. The Pinotage was aged in old neutral French oak barrels of 500 liters and in 4,100 liter casks. Half of the grapes are vinified as whole clusters, and the extractions are very long and gentle. The wine is aged for 18 months in bottle before being marketed. This vintage is based on grapes grown on granite soils of the Paardeberg, mixed with structured shales in the east, clay-rich soils in the north and mixed iron soils in the west.
