Wasenhaus - Mohlin - Spätburgunder 2021
Weingut Wasenhaus is located in the Baden region, Germany . Christoph Wolber and Alexander Götze met in Burgundy while studying oenology at the local school in Beaune. At the same time, they both worked full time in some of the largest biodynamic estates in Burgundy such as those of Pierre Morey, Leflaive, Comte Armand... Shortly after becoming roommates, they developed the plan to return in Germany and create their cellar in Baden. In Christoph's home region, they search for suitable plots and select them meticulously: one on the slopes of the Ehrenstettener Oelberg , and the other in the Ehrenkirchener Kirchberg . In recent years, they have bought several plots, some with very old vines. They grow their own grapes, but also purchase grapes from friendly companies with a similar philosophy that are used in the production of Gutedel. Their first vintage was released in 2016 and it was a great success. Christoph and Alexander perform gentle extractions, with very little punching down during fermentation, and occasional stirring to ensure healthy fermentation from the start. Sulfur is used judiciously and is only applied after malolactic fermentation. The wines are all aged in oak barrels.
The Spätburgunder Möhlin 2021 is made from Pinot Noir from the Ehrenstetter ölberg, partly on poor, shallow, clay-limestone soil. These plots are a little warmer, more exposed to the sun and are worked entirely by hand. The clones are mainly German (with different origins and ages) and a little Burgundian mass selection. Fermentation takes place with 30% whole bunches in wooden vats, it begins with carbonic maceration and continues with a few punching downs. Aging lasts 14 months in French oak barrels from several wines .
