Champagne Bruno Paillard - Blanc de Noirs Grand Cru
Champagne Bruno Paillard is located in Reims, in Champagne . Bruno Paillard was born in 1953 and comes from a line of brokers and winegrowers from the two Grands Crus villages of Bouzy and Verzenay. Following in the family footsteps, he began working as a broker in 1975, gaining a deep and in-depth knowledge of Champagne. But after six years, he wanted to create a different Champagne. In January 1981, armed with nothing but determination, Bruno Paillard sold his old Jaguar, a collector's car, to found his company. Bruno Paillard begins producing his champagnes in a rented cellar using grapes carefully selected from independent winegrowers. In 1994, Bruno Paillard bought his first vineyard: three hectares of grands crus in Oger in the Côte des Blancs . From then on, he patiently began building up his remarkable vineyard which today extends over 32 hectares, including 12 grands crus which provide more than half of the grapes the house needs. The rest is always purchased from the same independent producers, from more than 30 different villages, partners of Paillard for many years. In January 2007, his daughter Alice Paillard decided to join him and now co-manages the House with her father. They are committed to sustainable agriculture.
The Blanc de Noirs Grand Cru is composed exclusively of Pinot Noir coming exclusively from 4 Grands Cru vineyards: Verzenay, Mailly, Verzy and Bouzy. Vinification is mainly carried out in stainless steel vats, with 15 to 20% vinified in barrels. It is aged for 3 years on lees , then 6 more months after disgorging. It is an Extra Brut with 3 g/L dosage.
