Domaine Boris Champy - Bourgogne Aligoté Doré - Massale Selection 2022
Domaine Boris Champy is located in Nantoux , in the Côte de Beaune in Burgundy . Boris Champy is originally from Champagne and graduated in oenology. He worked for 10 years in the Napa Valley in California before becoming technical director of Maison Louis Latour. He was also manager and oenologist at the famous Clos des Lambrays. All-terrain, he was the initiator of an environmental protection association, is a triathlete, has swum across the bay of San Francisco and completed the pilgrimage from Dijon to Santiago de Compostela. The Domaine was founded by Didier Montchovet in 1984. With complete management of the vineyard, cellar and stocks, Domaine Didier Montchovet was renamed Domaine Boris Champy. Boris Champy believes enthusiastically in the future of Hautes-Cotes, thanks to their altitude in a context of global warming. He wishes to continue to raise the reputation of this little-known appellation. The objective is to show the subtle differences between climates and terroirs, with different types of soil, exposure to the sun, slope inclinations, etc. The estate was the first in Burgundy to receive Demeter biodynamic certification .
Bourgogne Aligoté Doré Sélection Massale comes from different plots located in the heights of the Hautes Côtes above 400 meters above sea level. The Aligoré Doré grapes are harvested by hand at optimal ripeness. The vinification is carried out partly in 228 liter oak barrels and partly in stainless steel vats . Aging lasts 12 months on lees without using new barrels, then a few months in stainless steel vats before bottling.
