Domaine du Gringet - Chez Edouard 2022
The Domaine du Gringet is located in Ayse, in Savoie . It belonged to Dominique Belluard and has been managed since 2022 by Franck Balthazar (winemaker in Cornas), Vincent Ruiz (young winemaker from Ardèche), Miguel Sarzier and Raphaël Bennour . From now on, the 9.5 hectare vineyard is worked with a plot approach . It is mainly planted with the Gringet grape variety (90%), the rest being shared equally between Mondeuse and Altesse. Vinification remains gentle and requires little intervention: native yeasts, limited use of sulfur, aging in neutral concrete, stainless steel and stoneware containers.
Chez Edouard is made from Gringet , the vines of which were planted in 1915 by a certain Edouard just before his departure for the war. It is the oldest vine on the estate. It is located at an altitude of 600 meters on a dome of limestone scree. Isolated from the rest of the vineyard, this plot is surrounded by forests. It is a late high altitude terroir but faces south, which allows for extensive but slow maturation. After gentle pressing for 7 hours, fermentation occurs with native yeasts. The wine is aged for 9 months on fine lees in stoneware jars . It is then left to rest for 10 months in the bottle .
