Mas Mellet - Maceration of the Salines - Orange 2023
Mas Mellet is located in Gallician , in Costières-de-Nîmes in the Gard . The estate was taken over in 2002 by Emilie and Brice Bolognini , when they were in their twenties. They work the 27 hectares of vines which were abandoned in organic farming , certified since 2007.
Macération des Salines is a cuvée produced in collaboration with Eric Pfifferling , from Domaine de l'Anglore located in the Rhône valley, in Tavel . This orange wine is made from Vermentino . After manual harvesting, sorting is carried out in the plot then in the cellar. The grapes are put in the refrigerator overnight then placed in vats by gravity. It macerates for 14 days then is devatted by gravity. The pressing and the flow of juice is done in demijohn.
