Domaine Sérol - Champtoisé 2022

Domaine Sérol is a family estate, cultivated biodynamically , on the eastern foothills of the Massif Central , near the Loire gorges. Stéphane Sérol took over the estate from his father in 1996. With his wife Carine, they selected the best potential terroirs of granite soils at high altitude (400 to 500 meters) and cleared the fields to replant the vines. They naturally chose to plant the local grape varieties of the region : Gamay Saint Romain (32 hectares) and 2 hectares of Viognier. A new vineyard of 2 hectares of Chenin Blanc was planted in 2018.

Champtoisé is made from Chenin Blanc , grown on a granite terroir. The young vines are located at an altitude of 400 meters. After direct pressing, vinification is carried out in 500-liter barrels, 12-hectoliter tuns and concrete vats . Alcoholic fermentation occurs with indigenous yeasts. The wine is aged for 11 months on fine lees .
