Jean Foillard - Morgon - 3.14 2017
Domaine Jean Foillard is a family estate in the Morgon appellation, in Beaujolais . Jean Foillard took over the estate from his father in the 1980s, adding new plots of land to the estate's holdings over the following decades. The estate worked in organic farming covers 14 hectares, much of which is located on the famous granite and schist hill of the Côte de Py . Most of the plantations are over 40 years old, some 100 years old.
The grapes are generally harvested late and the clusters are kept at low temperatures for several weeks before traditional semi-carbonic fermentation , with indigenous yeasts, minimal or no sulfur additions, and no chaptalization or filtration. The wines are aged in barrels oak from wines from Burgundy estates already used .
Cuvée 3.14 is Jean Foillard's great cuvée , produced only in the best vintages .
