Korrigans Cider (Romain Henin) - Apple Brothers 2022
Romain Hénin , a young winemaker, is based in Aÿ in the Montagne de Reims in Champagne . Recently, he launched a project around cider under the name of Korrigans.
Frères de Pommes is made from purchased apple juice in Orne and Cotentin. It is a blend of several organically grown varieties: 38% Kermerrien, 30% Judor, 20% Binet Rouge, 7% Marie Ménard and 5% Douce Moën. The apples are hand-picked, crushed and then pressed on site. The juice is brought back to Champagne and then aged in barrels for 11 months on their own lees. The foaming is natural and the aging is carried out on slats in the estate's cellars.
