Domaine Hubert Lamy - Saint Aubin 1er Cru - Clos du Meix 2022
Domaine Hubert Lamy is located in the commune of Saint-Aubin , on the Côte de Beaune in Burgundy . The Lamy family has been working the vineyard since 1640, but the modern Domaine Hubert Lamy was created by Hubert Lamy in 1973. Before creating his own estate, Hubert worked with his father, Jean Lamy. At that time, the estate covered approximately 8 hectares, mainly planted in regional appellations. Most of the estate's development took place in the 1990s when new vines were purchased or leased. Olivier Lamy , having originally studied winemaking and business, joined the family estate in 1995. Before joining his father, he interned at several other wineries and tasted wines from around the world. With this experience, he was able to bring new ideas and working methods to the vineyard and cellar. Today, Domaine Hubert Lamy has 18.5 hectares of vines spread across 20 appellations, including Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay . The terroirs of Domaine Hubert Lamy are mainly made up of limestone. The vineyard is managed using organic farming methods, which are not certified .
The Chardonnay grapes are gently pressed in a pneumatic press, lightly settled and then placed in 300-litre barrels or demi-muids (600 litres), aged 1 to 5 years, where the grape juice will ferment. A controlled temperature in the barrels and a cold cellar promote a long alcoholic fermentation, up to 90 days. The wines are lightly stirred to obtain a suspension of the lees . Malolactic fermentation takes place in barrels and the wines are racked in August, fined with casein and lightly filtered with Kieselgur. The doses of sulphur dioxide are added according to the analyses. Bottling takes place after 12 to 18 months of ageing .
