Domaine Les Ormousseaux - Coteaux du Giennois - Red 2021
Domaine Les Ormousseaux is located in Saint-Père and produces wines in the Coteaux du Giennois and Pouilly-Fumé appellations. In 2021, Clément Jolivet , originally from Cosne-Cours-sur-Loire and from a family involved in Sancerre and Pouilly-Fumé wines, took over the estate with Riandri Visser , a South African oenologist specializing in Sauvignon Blanc. Together, they undertook the conversion of the estate to organic farming. Their approach to winemaking is focused on showcasing the terroir while preserving the purity of the fruit.
Coteaux du Giennois is a blend of Pinot Noir and Gamay grown on a clay-limestone terroir covered with flint facing south. The harvest is carried out at night to keep the grapes fresh and prevent oxidation. The harvest is partially preserved in whole bunches and put into cold pre-fermentation maceration. After fermentation, the wines are blended and transferred to wooden vats for malolactic conversion. The wine is aged for 12 months in truncated cone-shaped barrels .
