Cuvée "Les Hauts de Carol's" LA TERRASSE D'ELISE 2014
“Les Hauts de Carol's” is the very last single-grape cuvée born at the estate. It comes from Cinsault, a grape that is more often found in blending than alone. By limiting its yield, the latter will give life to a supple and pleasantly scented wine.
The two-year aging in oak barrels allows the wine to assert its spicy character and to develop elegant aromas of red fruits. Lots of finesse and delicacy.
RVF Guide to the Best Wines of France 2017: favorite of the year, 18/20. " A unique wine presented but which by itself obtains the star for the estate: Xavier Braujou must have been very sure of his style, there is almost as much panache in the gesture as in this new cuvée ... We can make great Languedoc wines in single varietal, here is the proof. Behind its very tender color, this Cinsault delivers a femme fatale performance. It exudes a marvelous scent of faded rose, offers a racy, fine, exciting, airy texture from start to finish. Here is the real pinot du Sud! "
