Let it go, yes, but not so simple: Because wine is made up of 4 constituents whose maturities always differ more or less: stems, seeds, skins and juice. The art of vinification is to combine these 4 imperfect maturities with, as only tools, intuition, sensitivity, nose and experience!
More than fifteen different grape varieties and around ten mosaic plots from 4 to 77 years old — which moreover is in a swamped area — lead to very spread out harvests and very varied vinifications, so that the range of vintages is relatively wide.

The Orée cuvée is a very pretty white, not heavy like some southern white wines. The grape varieties used in this cuvée are Clairette, Roussane, Rolle Bourboulenc and Grenache.
