GIN - KI NO BI - Kyoto
The Kyoto Distillery is Japan’s first dedicated artisanal gin distillery. It is based in Minami-Ku, in the south part of Kyoto City, close to the Fushimi region, famed for hundreds of years for its production of nihon-shu (Japanese Sake). This location offers an abundance of raw materials: the soft waters of Fushimi and a huge selection of locally-grown ingredients such as yuzu, sansho and the legendary teas of Uji.
KI NO BI Kyoto Dry Gin is made with a particularly intricate production method: Botanicals are separated into six different categories (base, citrus, tea, herbal, spice and floral), each category is then macerated in rice spirit before being distilled individually. The distillates are then blended together before being left to marry together which allows the disparate flavours to harmonise, giving perfect balance in the gin.
