Pio Cesare - Vermouth Di Torino
The Pio Cesare Estate is located in Piedmont , Italy . Established in 1881 by Cesare Pio, it is one of the oldest in the region and one of the first to export its Barolo and Barbaresco wines. The estate is still run by Cesare Pio's descendants today, the Boffa family . The winery is located in the center of the town of Alba and built on the ancient Roman walls of the town. The vineyard covers 70 hectares: 31.78 hectares in Barolo, 26.90 hectares in Barbaresco and 10.35 hectares between these two regions.
Vermouth is produced with a blend of 26 aromatic herbs , such as wormwood, marjoram leaves, gentian roots, orange peel, and many others, which macerate for nearly 40 days in a small blend of different Pio Cesare white wines and alcohol. To this aromatic extract, the right amount of Chardonnay and some Moscato are added along with a little sugar and alcohol. The infusion is aged for at least 4 months in very small stainless steel tanks. The recipe is finally completed with the addition of burnt sugar.
