WATERFORD - Bannow Island - Edition 1.2 - 50%
Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Bannow Island 1.2 is made from Ed Harpur's barley, grown in his farm that carry the same name. The barley was harvested on September 7, 2015 and then distilled between June 04 and June 17, 2016. The maturation lasted 3 years, 10 months and 22 days. The whisky matures in a combination of 36% new American oak barrels, 26% vin doux naturel barrels, 21% American Virgin oak barrels and 17% Premium French oak barrels. 9,000 bottles were produced.
