Domaine des Marnes Blanches - Vin de Paille 2014
Domaine des Marnes Blanches is located in Sainte-Agnès, in the South-Revermont of Jura. Since 2006, it has been managed by Pauline and Géraud Fromont, trained oenologists. The ten hectares have been grown in organic farmingsince their arrival, and they obtained certification in 2013. The vineyard is divided into three islets at Cesancey, Sainte-Agnès and Vincelles and the plots are located on a terroir of white marl where the domain takes its name.
The Domaine's Vin de Paille is a blend of Chardonnay, Savagnin and Poulsard. The grapes are dried by over-maturation; the bunches are dried for several months on straw in order to concentrate the sugar and the aromas. The passerillage(passerillage raisining) lasts about 6 months, then the vinification takes place and the wine is aged for 36 months.
