Domaine Derain - Allez Goutons - Rouge 2020
Dominique Derain is an owner winemaker harvesting in Saint-Aubin, Burgundy. He worked in the cooperage industry until 1988, when he decided to acquire his own vineyard. The 8-hectare estate has been managed since his retirement in 2016 by his two employees: Julien Altaber and Carole Schwab. The working methods are those of biodynamics: lunar calendar, herbal teas, dung and silica preparations with more intervention in the vineyard than in the cellar.
The harvest is carried out by hand with transport in crates in order to keep the grapes whole and intact. The white grapes are crushed and then pressed as soon as they arrive in the winery. The must is put in vats for 2 to 3 days before being taken down to the cellar in old oak barrels for alcoholic and malolactic fermentation which lasts, depending on the vintage, between one and ten months. The red grapes, whole and/or partially destemmed, trampled by foot, ferment between 7 and 21 days in traditional wooden vats. At the end of alcoholic fermentation, the wine is drawn and assembled with the press and aged in barrels in the cellar for 6 to 14 months depending on the vintage. All wines have only one racking before bottling.
