TESTAMATTA - Bibi Graetz - 20ème anniversaire 2019
Bibi Graetz is a wine producer based in Fiesole, in the hills northeast of Florence, in Tuscany. The company is particularly known for its flagship wine Testamatta meaning “Crazy Head”. The estate took its modern shape in the mid 1990s when Bibi Graetz began taking an interest in the family vineyard, which until then was largely producing wine for family consumption. By 2001, Graetz had moved towards a more quality-oriented outlook, and began scouting out additional vineyard parcels in the area to rent. The estate now has around 30 hectares of vines in 20 small, organically farmedplots.
Testamatta is made from Sangiovese, grown in 5 vineyards: Siena, Lamole, Vincigliata, Londa and Montefili. The vines are between 35 and 50 years-old, cultivated in a mixture of soil rich of galestro and clay. Natural fermentation happens in open top barrels and 6 to 8 manual puch-down are carried out per day. The wine is then aged for 30 months. The 2019 vintage represents Testamatta's 20th anniversary and features a special label for the occasion.
