Domaine Jean Macle - Côtes du Jura Blanc 2017
The Domaine Jean Macle is located in Château-Chalon, in the Jura. It was created in 1850 by Jean Macle and is now managed by his son, Laurent Macle since 1995. The 12-hectare vineyard is entirely planted with white grape varieties: 8 hectares of Chardonnay and 4 hectares of Savagnin. The vineyard has been certified organic farming since 2015.
The Côtes du Jura is a blend of Chardonnay (dominant) and Savagnin. After manual harvesting, alcoholic and malolactic fermentation are carried out in vats. Aging lasts 36 months in 225-litres oak barrels.
