Bonnigal and Bodet Winegrowers - Clos de Beauce 2020
Bonnigal-Bodet Vignerons is an estate located in Limeray, in the Loire Valley . The estate has existed since 1927 and is still family-run. It is now the fourth generation, with Jean-Baptiste Bonnigal and his longtime friend Stéphane Bodet , who operates the vineyard. They produce wines under the Touraine Amboise, Crémant de Loire and Touraine appellations, on 55 hectares. For them, the majority of the work is done in the vineyards: tillage, enhancement of the ecosystem, respect for nature and the environment. They are also not very interventionist in the cellar in order to let the terroir of each cuvée express itself fully. The aging tends to be long, in oak barrels and on fine lees.
Clos de Beauce 2020 is made from Chenin Blanc whose age varies from 50 to 70 years. The grapes are sorted on a sorting table then put into direct pressing. Alcoholic fermentation occurs spontaneously with indigenous yeasts and can last up to 6 months. Malolactic fermentation is not sought for this cuvée. The aging is carried out in demi-muids of 620 liters for 8 months on the fine lees . The wine is bottled with 1.7 g/L of residual sugars .
