Colores Santos - Carmenere & Syrah 2021
Colores Santos is produced in Valle de Cochalgua, Chile . The Colchagua Valley has evolved over the past twenty years from a quiet stretch of farmland to one of the most important and active wine regions in Chile. The low elevation of Colchagua's coastal hills allows Pacific breezes to interact with winds from the Andes, cooling the valley and extending the region's ripening period, which helps preserve grape acidity and produce red wines with excellent color, freshness and great aging potential.
This wine is a blend of Carmenere (90%) and Syrah (10%) . Mechanical harvesting is preferably done at night to take advantage of the cool night temperatures. Before being put in vats, the grapes are cooled. Before the start of the alcoholic fermentation, the grapes macerate for 7 days then the alcoholic fermentation lasts 7 to 10 days. During the alcoholic fermentation, pumping over is carried out daily. After fermentation, a post-fermentation maceration is carried out for around 7 to 10 days. The wine is then aged in barrels.
Grapes: 90% Carmenere, 10% Syrah
