Domaine Joliet - Clos de la Perrière - Monopole 2017
Domaine Joliet is located in Fixin, in the Côte de Nuits in Burgundy . Originally, the estate was just a hunting lodge for the Dukes of Burgundy surrounded by forest. The monks of Cîteaux settled there in 1142 and then detected the potential of the terroir. The block of cliff covered with forest becomes a stone quarry which will be used for the construction of the manor, the cellar and other constructions in the village of Fixin. The name of the Clos was then born: La Perrière. The forest is uprooted on the hillside and the vines are planted on 5 hectares. The monks work the vines, the wines age on site in the cellar for about 500 years. But after multiple religious wars, they divest themselves of the estate in 1622. Several families then followed one another until the current owner: the Joliet family who has been running the estate for 7 generations. Today, Bénigne and Marie-Claire Joliet are in charge of operations. The vineyard is worked with respect for the environment : music therapy for sheep, herbal teas of presles and nettles, control products certified in organic farming, method of sexual confusion to ward off parasites, natural composts...
The Fixin Premier Cru Clos de la Perrière is made from Pinot Noir , grown on 4.5 hectares divided into 4 micro-plots. The age of the vines is around 50 years. The harvest is manual and the bunches of grapes are meticulously sorted on a sorting table. The whole bunches are placed directly in the tank where the alcoholic fermentation begins, which is carried out exclusively with the natural yeasts present in the berries. The vatting lasts an average of 20 days in order to extract all the strength and finesse of the terroir. The ageing, which lasts about 24 months, is adapted to each micro plot of Clos de la Perrière. The proportion of new oak is 20%. The wines from each micro plot are blended before bottling.
