Sampan is a rum from Vietnam , produced at the Distillerie d'Indochine . It was created by a group of expert friends in the field of wines and spirits, who wanted to bring together in the same project their love for rum and their attachment to Vietnam. The Distillerie d'Indochine is located by the sea, in a privileged natural environment where the conditions for production and aging in barrels are perfect. The sugar cane fields are cultivated 40 km from the distillery, in a traditional way without pesticides or chemicals . The harvests are done by hand and the best canes are selected. Sugar cane, a local variety in Quan Nam province, is renowned for its high quality and for its aromatic properties.
The harvest of sugar cane for the production of Sampan rum is carried out at the end of the day. The harvest is done by hand involving low yields for a better concentration of juices. The reception and the crushing is done within 12 hours after the cut, to preserve a maximum freshness of the juices. The fermentation tanks are thermo-regulated allowing a gentle fermentation of 72 to 96 hours. Once the juice is completely fermented, it is sent to a 1,000 liter column still which allows continuous distillation of each of the 4 fermentation tanks.
This Cellar Series edition has been aged in ex-Cognac barrels .
