Weingut Pfaffl - Saint Laurent Wald
Weingut Pfaffl is located in Stetten, in the Weinviertel region of Austria . In 1978, Roman Pfaffl bought a farm and 0.75 hectares of vines. Today the estate is run by his children Roman Josef Pfaffl and Heidi Fischer . They cultivate about 115 hectares; the vineyards are located in 10 different communes in order to have varied soils and microclimates. The vineyard is managed with respect for the environment, with sustainable agriculture .
The cuvée Wald is made from the local Saint Laurent grape variety (Sankt Laurent, St. Laurent). All the vineyards of the Saint Laurent cultivated estate are located next to a forest, hence its name Wald meaning "forest". The temperature differences between day and night promote slow vegetation, which suits this variety and brings more complexity to the wine. The grapes are destemmed and pressed. Fermentation lasts 21 days in stainless steel vats with pumping over. The wine is aged in stainless steel vats (50%) and in barrels of several wines (50%).
