LUCIEN AVIET - Cuvée des Geologues - Trousseau 2021
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
The 2021 Geologists cuvée is made from Trousseau (80%) , exceptionally supplemented with Poulsard (20%) . The grapes come from 4 plots: Ruzard, Rosières, Poussot and Nonceau. The harvest is destemmed and vinified by parcel. After maceration for 3 weeks, the wine is transferred to oak barrels for 12 months . The wines are then blended.
